Tomato tarte 

This recipe is easy, like Sunday morning, like the 100% best way to eat an egg, like basic addition, it’s so easy you could do it in your sleep, and not only is it easy, it’s also impressive.

Whip this sucker up to wow your friends, or to impress your sweetheart. But whatever you do, make sure you give the tomatoes the time and attention they deserve, they’re the star ingredient, and for good reason. This starts with picking some gems based on size/color/whatever else you’re going for with the tarte. Personally, we love the size/shape/color variations so we bought em all at the farmers market and went from there. Praise be to the tomate is all we're really tryna say. 

INGREDIENTS:

1 Frozen Puff Pastry

2 Pints of Cherry Tomatoes (You can also use Heirlooms and slice em up)

1 Large Yellow Onion

3-4 Tbsp Pesto

1 Tbsp Flour

Fresh Basil

Balsamic

Olive Oil

Vegan Ricotta (For topping, use whatever cheese your heart desires)

LETS GET DOWN TO BUSINESS- NO HUNS THO.

1. Start out by defrosting your puff pastry, (we used Mirabelle's Princess Puff Pastry) and spreading a small amount of flour out on a dry surface.

2. In the meantime set a large pan on medium heat and drizzle in a little olive oil.

3. Slice your onion and set into pan.

4. Cook for 30 minutes or until golden brown, stirring occasionally.

5. Once the pastry is thawed roll it out flat on your surface and then transfer to a pan lined with parchment paper (drizzle a lil EVOO on that paper beforehand to keep that baby from sticking!)

8. Layer your tomatoes in a manner pleasing to the eyeballs (we’re going for a WOW factor here people)

9. Bake on 450 until the puff pastry puffs! Keep checking on it!
