Cut the eggplant in slices
Before you do ANYTHING else, you need to take excess water out of the eggplant. Sprinkle salt on each slice and place them on a paper towel and place another paper towel on top.
Wait for about 45 minutes.
After 45 minutes, it is time to get the party STARTED
Set oven to 425F
Take three bowls: one with the whisked eggs, one with the flour and one with a mixture of bread crumbs, nooch, seasonings, salt and pepper.
Dip the eggplant in the flour, then in the eggs, then in the breadcrumbs and place them on a pan with parchment paper.
Place them in the oven for 10 minutes, flip them over and bake for another 10 minutes.
Take them out, put tomato sauce on the parchment paper, then the eggplant on top of the sauce, then more sauce on top. Try not to get too lost in the sauce.
Top it off with some PARM if you wanna be fancy.
Place it back into the oven and cook for about 7 more minutes.
Try not to burn your tongue because you’re gonna wanna eat it IMMEDIATELY.

1 tbsp Nutritional Yeast
1 tbsp of Italian Seasoning
1 tsp Dried Basil
Pinches of Salt and Pepper
Maddie’s Tomato Sauce, if not just regular tomato sauce
